Ieuan Edwards paid a visit to our salt marsh lamb farmer, John Pritchard on Anglesey.

This lamb is normally available between June and October – it’s simply superb. The flavour of both the meat and fat is outstanding. They graze on salt marshes that have never been farmed in the modern sense with the salt water washing over the grass on a regular daily basis. Indigenous halophyte grasses that grow in waters of high salinity come into contact with saline water through its roots or by salt spray, the lambs then graze these natural indigenous grasses. This type of lamb is also regarded as a great delicacy in France.
