Cream of the Crop for Edwards’ Sausages04/11/16
As Britain’s Best Butcher, we’ve searched far and wide to find the best ingredients to put in our sausages – from Quality Assured pork shoulder, to Welsh leeks, apples & honey.
Pork and Apple Sausages are made using purée from Bramley apples grown in an orchard in the Brecon Beacons. Nestled on the North Slope of Sugar Loaf Mountain, the orchard produces various apple varieties but Bramleys’ were chosen for their sharpness which mellows when cooked, giving them a sweet, melt-in-the-mouth taste.
The orchard is certified organic and is sheltered by Sugar Loaf Mountain, providing a microclimate that gives the apples their unique taste. The higher altitude also means the apples grow more slowly here than elsewhere in the UK, which only improves their taste further!
Originally an animal-rearing farm, in the last 20 years, the farm has expanded to include other orchards growing sweeter apples; these are used to make local cider and apple juice.
Having worked with Edwards of Conwy for 3 years now, Stephen Helme, owner of the Orchard, believes that strong supplier-buyer relationships are essential elements in producing the best food. Using local suppliers is especially important to the Welsh food market and he counts local hotels, restaurants and breweries among his customers.
His relationship with us has gone from strength to strength in our time working together. “It’s a very exciting opportunity”, Stephen noted “We now have our apples sold in products throughout Wales. Our contract with Edwards means that we will now be seeing them on plates and glasses on tables across the country”.
