SALT MARSH LAMB

Salt Marsh Welsh Lamb from the salt marshes of Anglesey, as recommended by Rick Stein in his Food Heroes TV series.
This lamb is normally available between June and September - it's simply superb. The flavour of both the meat and fat is outstanding. They graze on salt marshes that have never been farmed in the modern sense eating one grass in particular called "sparta" grass. This type of lamb is regarded as a great delicacy in France. An absolute must. |
WELSH MOUNTAIN LAMB
When neither of the above lamb is available we buy from regular suppliers whom we have known and trusted for many years. They hold similar values on production and quality with the lamb coming either from the Conway Valley or the surrounding mountains.
Our lamb always has the correct amount of fat cover for succulence and taste. The meat is then matured for a minimum period to ensure tenderness.
